Abstract

The book "Food, culture and space" is the result of a seminar on anthropology of food in which what is defined as a culinary region is explored from the concept of "sociocultural region". For the coordinators of this collective work, the culinary regions make up a complete cultural system. In this framework, case studies are presented that support the explicative capacity of this concept.
